I wish I could figure out how to make the mirror lights come on with the fogs lights

I believe this is your answer. The bottom option should give that control. The top option is to link them to high beams. I have not done either of these mods and my only exposure to them is a Lonestar Hawaiian video showing the install of the high beam option.

Yea, I saw that. Doesn't work exactly as I would like. You have to hold the bottom all the time to keep it working while driving.I believe this is your answer.
