Dash Board Question; Why does this pickup with red engine and back seat come on at cold start?

Those are rear seatbelt indicators. Right now it is showing you none of the three belts in the rear are connected.
 
It is your truck showing a cold-start status indicator. On newer GM trucks like our TBs, that truck red graphic at the engine and red in the rear area appears when the vehicle is very cold at startup.
Front (engine in red):
The engine oil and coolant are extremely cold and not currently at proper operating temperature.
Rear (cab/bed area in red):
This represents the cabin and/or drivetrain components (like transmission fluid, transfer case fluid) also being very cold.
