Transmission Thermostat Delete

got 2019 LT Trail Boss.. I live in NJ. Local mechanic deleted my thermo b/c it was faulty and buzzing... said its a crappy design and better off without it. Jersey temps too cold in winter to have a full delete or should i replace the 198 degree thermo with the 160 degree GM replacement or A PPE which i see better quality... OR, am i OK in Jersey winters with a full delete... ??
