True duel exhaust upgrade

I spoke to a shop today that says my Silverado should have three catalytic converters (2024 Trailboss) - one can be deleted and I can make the exhaust true duel exhaust - I’m looking to see if anyone has done this? Will it throw codes on the dash? And would it pass emissions still? I’ve read that the cat is unmonitored and there are no issues with removal - am looking to verify. Thanks ahead of time for any responses….

That shop is a bunch of morons. There's only 2 unless for some reason the 5.3 has an extra one. There's one on the end of each manifold at about a 45 degree angle. A Y pipe to the passenger side, a muffler, flapper valve then a Y for duals once over the axle.
